Buffalo Cauliflower

Whether you are cooking for a game day meal or just a weeknight meal, you can’t go wrong with Buffalo Cauliflower. This is a combo that I was reluctant to try for so long, but started ordering it as an appetizer at every restaurant I could find it and fell in LOVE. There is something about eating something that is messy, but also knowing it is just a veggie, or maybe that is just me!

This recipe is two simple ingredients! How many recipes can you find that are that simple? That is why I love making it is an appetizer or as a side dish for a weeknight meal. All you need is Buffalo Sauce (I like Noble Made best) and some cauliflower. You don’t even need a knife for this recipe, but can always use one if you are more civil than I am.

The best part about this recipe is that you can please everyone. Choose a spice level that will please everyone or make a double batch- one for mild folks and one for those that like it spicy! I like to serve this with my dairy-free ranch dressing, some celery and call it good.

Tips for Buffalo Cauliflower:

  1. I used to hate chopping cauliflower because it makes a mess! Now I leave it in the plastic, and bang it on the counter a few times stem side down. It breaks apart the stem from the florets and doesn’t even make a mess!
  2. Feel free to use your favorite buffalo sauce.
  3. I serve this with my Dairy-free Ranch Dressing.
  4. You can also cook this in the air fryer for about 10 minutes or until the cauliflower is slightly crispy.

Ingredients
  

  • 1 head Cauliflower
  • 1 cup Buffalo Sauce I like Nobel Made

Instructions
 

  • Preheat the oven to 400°F.
  • To get the cauliflower into bite-sized florets, either cut the cauliflower using a knife, or you can leave the plastic on, bang the head of cauliflower stem side down on the counter and rotating a quarter turn until it falls apart in the plastic.
  • Put the florets into a large bowl and pour the buffalo sauce in. Mix until the cauliflower is coated thoroughly.
  • Dump the cauliflower onto a sheet pan and place in the oven for 25 minutes or until fork tender.
  • Serve with ranch dressing or your favorite dip and enjoy!
