Lately, I have been in the mood for a really big salad! Summer time usually does this to me because they are light and refreshing, yet still very filling and satisfying. I really like salads that you only need to chop a few things and still have a ton of flavor. One type of salad that comes to mind that fits in this category is a Chef Salad. It has lots of flavor from the different meats, pickled veggies, and a super simple dressing. This Chef Salad is totally customizable and makes for a really delicious meal during the hot summer months.

To me, a good salad still has all the components of a meal: veggies, fats, and protein. This salad is full of veggies, has olives and dressing for some healthy fats, and has an egg and deli meats for protein. My favorite salads are the ones that make me really full! If you build a salad like you would any other plate, it will keep you full for a long time. One of the most common things I hear is that salads are boring or not filling. This is why it is important to fill them up, make them big, and add all the topping to them.

When it comes to deli meats for this salad, there are some that are filled with lots of ingredients and some that aren’t. They are just like anything else so make sure you read the labels! They can have a lot of sugar and preservatives, which for me personally, I don’t like. I really love Applegate meats. They have some that are Whole30 compatible and some that aren’t, but I always know it is quality meat with minimal ingredients.

Tips for Chef Salad:

  1. Use any meat that you like! Like I mentioned, I use Applegate, which can be found at almost any grocery store now.
  2. If you don’t have the ingredients or time to make a dressing, buy one! I like Primal Kitchen Italian Vinaigrette.
  3. If you are making this for lunches, prep everything ahead of time to make your mornings or lunch time easier. All of these ingredients will last if you chop them at the beginning of the week.

Ingredients
  

  • 2 heads Romain Lettuce You can also use 1 large head
  • 1/2 Red Onion sliced
  • 1/2 cup Cherry Tomatoes quartered
  • 1/4 cup Pepperoncinis sliced
  • 1/4 cup Black Olives sliced
  • 4 Hard Boiled Eggs
  • 4 slices Turkey meat I like Applegate
  • 4 slices Ham I like Applegate

Dressing

  • 1/2 cup Olive Oil
  • 1/4 cup Red Wine Vinegar
  • 1 tbsp Dijon Mustard
  • 1 tbsp Garlic Powder
  • 1 tbsp Italian Seasoning

Instructions
 

  • Wash and chop the Romain Lettuce.
  • Combine Salad ingredients into a bowl and toss.
  • Combine Salad Dressing ingredients into a mason jar or a bowl and mix thoroughly.
  • Dress the salad to your liking and combine into four bowls. Serve and Enjoy!
