Ingredients

  • 2-4 Pork Chops I like Greensbury Market
  • 1/2 cup Olive oil
  • 1/4 cup Champagne vinegar
  • 1 tbsp Dijon mustard I like The New Primal
  • 1 tbsp Garlic
  • 1 tsp Parsley
  • 1 tsp Thyme
  • Salt and pepper

Instructions

  • Whisk all marinade ingredients together and pour into a gallon size zip-top bag along with the pork chops. You can set aside a small amount of the marinade to pour over when pork chops are finished cooking.
  • Marinade in your refrigerator for at least an hour- preferably at least 2 hours. This will also sit well overnight!
  • When you are ready to cook, grease your air fryer or sheet pan with your favorite cooking fat. For the air fryer, cook on 375 degrees for 10-12 minutes depending on the thickness of the pork chop. For the oven, cooking 375 degrees for 15-20 minutes. For both the oven and the air fryer, cook until the pork chop reaches an internal temperature of 145 degrees.
  • Garnish with extra marinade that you set aside and enjoy!

Notes

  • As I mentioned, you can marinade overnight or just a couple of hours before.
  • If you don't have champagne vinegar, you can use apple cider vinegar.
  • My favorite dijon mustard for this is The New Primal (use code ALTITUDE for 15% off).
  • This marinade goes great on veggies, chicken or fish too.
